Deep-fried papaya salad is the dish to remember here – crisp, fiery, and far more fun than another polite plate of pad Thai. Nat and Net teach four Thai dishes in a large open kitchen facing the street, with each cook making their own portion from scratch.
Red curry chicken, chicken soup and mango sticky rice have all appeared on the menu, alongside proper explanations of herbs, flavours and where the heat comes from. Chillies stay in your control, so beginners can cook without accidentally turning lunch into a medical event.
Vegetarian swaps are available, and the class leaves room to adjust dishes around what you actually eat. The cooking stays traditional without becoming theatrical, which is the right balance – nobody needs a lecture from a lemongrass stalk.
Hotel pickup and return are part of the setup, handy for anyone based around northern Koh Lanta. Arrive hungry: the first dishes land early, and there is enough food to make breakfast beforehand a questionable bit of planning.
