Tom yum seafood arrives loaded with fresh fish, vegetables and enough heat to justify the iced drinks. Sunshine sits on Koh Lanta’s quieter east coast, with a terrace looking across the water towards scattered islands and working boats.

The seafood curry is the food to travel for, while chicken massaman, papaya salad and fried rice all pull their weight. Banana pancakes are unusually good here, and the Southern milk tea, iced coffee and fruit shakes handle the humid bit of the day admirably.

This is a proper road-stop restaurant, not a polished beach-club production. The setting stays calm, the sea sits directly below the terrace, and fish occasionally break the surface while eagles circle overhead – nature showing off again.

Western cravings get a decent answer too: the spaghetti has more backbone than most island versions. Fuel is available on site, which is handy on an east-coast ride where the road offers scenery before infrastructure.
