Tamarind prawns, garlic-pepper squid and green curry are the things to chase at Paul’s, a roadside Khlong Khong stop with an English-pub shell and properly serious Thai cooking inside. The curries have depth, the seafood arrives hot from the wok, and portions land with the sort of confidence normally reserved for freight deliveries.
Paul’s menu wanders cheerfully across Thai standards, fried chicken, chicken satay, pizzas, smoothies and cocktails. That chicken curry pizza sounds like a tourist trap conceived during a power cut, yet it works. Deep-fried tofu stays crisp, cashew chicken has bite, and the coconut banana dessert deserves a separate stomach.
The front tables face the main road near Divy’s, so settle in with a cold Chang and watch Khlong Khong traffic perform its daily ballet of scooters, sidecars and mild improvisation. Paul knows the island well and speaks fluent local-direction shorthand, useful after a few beers.
Foodies should favour the Thai side of the menu: Massaman, yellow curry, tamarind prawns and satay sticks are the strongest bets. The banana milkshake is absurdly good, which is a dangerous thing to discover in walking distance of dinner.
