Description
Thin rice noodles, egg, tamarind sauce and a hard-working wok turn out Koh Lanta’s most focused pad thai. Pom makes one dish, with chicken or vegetarian, and has spent enough time on it to make the island’s longer menus look mildly overambitious.
The flavour lands savoury, sweet and sharp without becoming a sugar festival. The noodles are finer than the fat, floppy versions common around Thailand, and the egg catches the sauce properly. Vegetarian portions can be made vegan, with the wok cleaned first.
The stall sits a few metres from Long Beach, beside a supermarket where drinks are easy to collect. Seating is behind the stall, simple tables, and the food arrives on paper with chopsticks. Watching Pom work the wok is half the entertainment; the other half disappears alarmingly fast.
Dinner here suits Foodies and Budget eaters who care more about a plate of noodles than mood lighting. Pom’s tamarind sauce and the fine noodle texture are the bits that stay in your head after the beach sand has finally left your shoes.
